Do you have any vegan pasta?

Both our Plant-Based Cheese Tortelloni and our Plant-Based Sausage Tortelloni are vegan and 100% dairy free.

We utilize plant-based "cheese" which is free from dairy, preservatives, casein, lactose, gluten, nuts and soy. It is based on coconut oil and is fortified with Vitamin B12.

We use plant-based Italian "sausage" which is made of pure plant protein and free of gluten and soy. It is also verified non-GMO and certified vegan.

Out of an abundance of caution for our consumers, we state that this item 'may contain milk' as it is manufactured on shared equipment that processes other cheese filled pasta items. However, a rigorous cleaning process is made between each item run to mitigate any cross-contamination risk.

Are your pastas Kosher?

All of our products, with the exception of our filled (tortelloni, ravioli) pastas, are Kosher Certified by the Union of Orthodox Jewish Congregations of America. They are Pareve, meaning they do not contain milk or meat ingredients.

Are your pastas Dairy-Free?

All of our products, with the exception of our filled (tortelloni, ravioli) pastas, are dairy-free. They are also Kosher Pareve, meaning they do not contain milk or meat ingredients.

Why does your tortelloni and ravioli have brown "specks" in them now?

Historically, we've used golden flaxseed in our filled pastas, such as ravioli and tortelloni. But like so many, we've been hit by a global supply chain shortage - making golden flaxseed unavailable. For this reason, we've switched to using brown flaxseed for the foreseeable future.

The brown flaxseed is identical to its golden relative - other than in color. Our ravioli and tortelloni remain 100% certified gluten-free. Taste and texture remain unchanged, and we promise our pasta is always guaranteed fresh. Other than a slight change in its appearance, the pastas are identical to the one you know and crave.

What’s Xanthan Gum?

Xanthan gum is produced by the fermentation of a sugar (glucose)—much like the way yogurt is made. In our case, it's a non-GMO ingredient derived from corn that adds volume. There are no corn proteins in xanthan gum, and the ingredient itself is a very small percentage of the product. That said, if you have an allergy to corn, we advise checking with your doctor before consuming.

What is the ingredient Glucono-delta-lactone?

Glucono-delta-lactone is a natural acidifier also found in wine and honey.

What is the ingredient Konjac?

Konjac is a perennial plant. As an ingredient, konjac, is used as a plant-derived thickening agent.

Why is there so much sodium in your pasta?

We use salt in our fresh pasta to help ensure quality, inhibit microbial growth and prolong the shelf life so it remains fresh, safe and delicious for long as possible. By utilizing salt, we are able to avoid using less common ingredients with names you likely haven't encountered before.

The good news is that for our unfilled pasta, ~60% of the sodium transfers into the water during cooking leaving only 40% in the finished pasta. For our filled pasta, ~30% transfers into the water during cooking. Due to this phenomenon, it is not necessary to salt the water prior to cooking as is typically recommended when cooking pasta.
