Quick Mediterranean Linguini with Veggies

A light and flavorful dish packed with vibrant Mediterranean flavors, perfect for a quick yet elegant meal.


Ingredients

1 package Taste Republic Gluten-Free Cauliflower Linguini
2 tbsp olive oil
1 cup cherry tomatoes, halved
2 cloves garlic, minced
½ tsp salt (adjust to taste)
½ tsp red pepper flakes
⅓ cup black olives, halved
½ cup artichoke hearts, chopped
1 tbsp fresh lemon juice
¼ cup grated Parmesan cheese (or dairy-free alternative)
2 tbsp fresh parsley, chopped


Instructions

Cook the cauliflower linguini according to the package instructions. Drain and set aside.

In a large pan, heat olive oil over medium heat. Add cherry tomatoes and sauté for 2-3 minutes until they begin to soften. Stir in the minced garlic, salt, and red pepper flakes. Cook for another 2-3 minutes, stirring occasionally, until the tomatoes break down into a light sauce.

Add the cooked linguini to the pan, tossing to coat it in the tomato mixture. Stir in the black olives and chopped artichoke hearts, cooking for another minute to warm them through.

Drizzle with fresh lemon juice and sprinkle in the grated Parmesan cheese. Toss until evenly combined. Serve immediately, garnished with fresh parsley.
