Homemade Vodka Sauce & Gluten-Free Cheese Raviolini

⁠A little tangy, a little tomato-y, and a little creamy, vodka sauce makes the perfect pairing for ravioli! While this recipe calls for vodka, it evaporates throughout the cooking process, making this sauce safe for your kiddos to eat. Vodka simply adds a bit of heat and sharper taste to the sauce that balances out the sweetness of the tomatoes and heavy cream. ⁠

Ingredients:
1 package Taste Republic frozen four cheese raviolini (available at select Target stores) or Spinach & Cheese Ravioli
2 tbsp olive oil
1 large shallot, chopped
3 cloves garlic, minced
16 oz whole peeled tomatoes
1/4 cup vodka
1 tbsp tomato paste
3/4 cup heavy cream
1/2 cup grated parmesan
1/4 cup chopped basil
Salt and pepper to taste

Directions:

Add olive oil to a large skillet, and sauté shallot and garlic over medium heat until fragrant.

Stir in tomatoes and vodka and cook for 5-6 minutes. Then add tomato paste, salt, and pepper. Reduce heat and let simmer.

Bring four quarts of water to a boil. Take raviolini out of freezer, peel back film, and boil pasta for 3 minutes. Drain and set aside.

Add sauce mixture to a food processor and blend until smooth. Return to skillet and add heavy cream and parmesan.

Add raviolini and top with chopped basil. Enjoy!
