Easy Gluten-Free Spinach Fettuccine with Pesto, Mozzarella, and Tomato

We can't get enough of the classic tomato and mozzarella combo, and this gluten-free fettuccine dish is a great way to turn caprese into a full meal. With an extra dose of veggies from the pasta, it's never been easier to get a fresh, seasonal, nutritious meal on the table.


1 package Taste Republic gluten-free Spinach Fettuccine

1/2 cup mozzarella pearls

Small handful cherry tomatoes

1/4 cup pesto of choice

1 tsp Italian seasoning

Salt and pepper to taste


Cook and drain pasta according to package instructions. Transfer back to pot on low heat.

Stir in pesto to coat pasta evenly. Add salt, pepper, and Italian seasoning.

Cut tomatoes in half, then add tomatoes and mozzarella pearls to the pasta. Plate, top with fresh basil if desired, and enjoy!
