Ingredients
1 package Taste Republic Gluten-Free Four Cheese Tortelloni
1/4 - 1/2 of a rotisserie chicken, shredded
1/2 heads romaine, chopped
1 tomatoe, chopped
1/2 cup black beans, drained and rinsed
1 /2 cup corn kernels, drained and rinsed
1 avocado, sliced
1/2 cup red onion, diced
¼ cup buttermilk
¼ cup ranch dressing
½ cup BBQ sauce, divided
4 tbsp fresh dill, chopped
4 tbsp fresh chives, chopped
Black pepper to taste
Directions
Prep Ingredients: Shred the rotisserie chicken and place in a large bowl. Chop romaine, tomatoes, red onion, avocado, dill, and chives. Drain and rinse the black beans and corn. Set aside.
Cook Tortelloni: Prepare the Gluten-Free Four Cheese Tortelloni according to package directions. Strain and add to the bowl with the shredded chicken.
Coat the Chicken: Add ¼ cup of BBQ sauce to the chicken and tortelloni. Mix well, adding more BBQ sauce if needed to coat the chicken evenly.
Assemble the Salad: Add the chopped veggies, black beans, corn, and romaine to the bowl.
Make the Dressing: In a measuring cup, combine buttermilk, ranch dressing, 2 tbsp of BBQ sauce, chives, and dill. Whisk until well blended.
Toss & Serve: Pour the dressing over the salad and toss gently until everything is coated. Finish with a sprinkle of black pepper. Enjoy!
