Looking for new ways to get your greens that don't involve eating salad? This Gluten-free Linguini in a homemade sunflower pesto sauce is just what you need
1 package Taste Republic Linguini or Spinach Fettuccine
4 cups lightly packed baby spinach
3-4 cloves of garlic
1/3 cup olive oil
1/4 cup fresh lemon juice (from about 1 lemon)
1/2 cup nutritional yeast or grated Parmesan
1/2 cup roasted unsalted sunflower seeds
Salt, pepper, and cayenne pepper (to taste)
Add spinach, garlic cloves, extra virgin olive oil and sunflower seeds to a blender. Add nutritional yeast, salt, pepper, cayenne pepper and lemon juice to the mixture and blend until smooth, adding extra oil or lemon juice if it's too thick for your taste.
Cook pasta per package directions. Warm sauce mixture in a pan and add cooked Linguini. Plate and serve. Enjoy!
