If you’re like us, you're probably always looking for creative ways to get kids to eat more veggies. Colorful foods can help bring a little extra fun, play, and curiosity to the table -- and with a hot pink color and lightly sweet flavor thanks to roasted beets, this pasta definitely delivers. Plus, it's just as delicious for the grown-ups if there are a few bites left on the plate :)
Ingredients
2 medium sized beets
1 bulb of garlic
Drizzle of olive oil
Pinch of salt
1 package Taste Republic Gluten-Free Linguini
1/4 cup feta (plus extra for topping)
1/4 cup lemon juice
Walnuts for topping (optional)
Directions
Chop off the top of your garlic bulb to expose the cloves. Drizzle garlic clove and your 2 whole beets with olive oil and sprinkle with salt. Wrap your prepared garlic and beets in foil and place on baking sheet. Roast at 400 degrees for 40 minutes.
While those are cooking in the oven, make your Linguini according to package instructions. Reserve 1/4 cup of pasta water before draining.
-When the roasted beets and garlic are done, add them to a blender with 1/4 cup of pasta water, feta cheese, lemon, salt, and pepper. Blend until smooth.
Pour beet sauce mixture into drained pasta and stir until combined and perfectly pink. Plate and top with feta and walnuts if desired. Bon appetit!
