When the days get warmer, there's nothing like a pesto pasta salad to satisfy that craving for a fresh, satisfying meal packed with greens. This gluten-free kale pesto pea pasta salad is a little twist on a classic - and all you have to do is toss some ingredients into a food processor!
- 1 package Taste Republic fusilli
- 1 cup peas
- 1/2 cup pine nuts
- 1 cup basil leaves
- 3 de-stemmed large kale leaves
- 1/2 squeezed lime
- 1 tsp salt
- 1/2 cup avocado oil
To make the pesto, blend pine nuts, basil leaves, kale leaves, lime, salt, and avocado oil together in a food processor.
Place pasta and peas in boiling water for three minutes until cooked through.
Strain and toss in the pesto. Enjoy!
