Gluten-Free Greek Inspired Pasta Salad

Gluten-free pasta salad is an inclusive and easy dish that brings a lot of flavor with minimal kitchen time. It's perfect when you need a fresh side dish or even a lighter main that everyone can enjoy.


Gluten-Free Greek Pasta Salad Ingredients

1 package of Taste Republic Gluten-Free Red Lentil Fusilli
10 mini white potatoes
8 cherry tomatoes
1/2 of a cucumber
1/2 cup of feta cheese
1 red onion
4 tsp oregano
1 cup of olive oil + 4 tbsp
salt and pepper


Gluten-Free Greek Pasta Salad Directions

Cook Taste Republic Gluten-Free Red Lentil Fusilli according to package directions, strain and set aside to cool.

Chop red onion, tomatoes, crumble feta (if not already crumbled) and grate cucumber to create cucumber shreds (this part is key!). Set aside.

Cut mini potatoes in half, put them in a bowl, season with 4 tbsp of olive oil, 2 tsp of oregano and salt & pepper to taste.

Cook in an air fryer for 30 minutes at 350 degrees. Once the potatoes are cooked, set aside to cool a bit, and begin to assemble pasta salad.

Starting with Gluten-Free Red Lentil Fusilli as the base, add all remaining ingredients. Top with remaining olive oil, oregano, and salt & pepper to taste. Combine, plate and serve.
