Gluten-Free Dairy-Free Lasagna Recipe

If gluten and dairy aren't part of your diet, you might have written off lasagna as a no-go meal. Well, you can officially put it back into the rotation with this Gluten-Free Dairy-Free Lasagna. With a cashew "cheese" and these GF oven-ready fresh lasagna sheets, you've got a delicious, hearty meal to satisfy the whole crew.

 

Ingredients

For the "Cheese"

  • 2 1/4 cups raw cashews, soaked for 1 hr in hot water, then drained
  • 3 1/2 tbsp lemon juice
  • 4 tbsp nutritional yeast
  • 3/4 tsp garlic powder
  • Pinch of sea salt
  • 2/3-1 cup water (add 1 tbsp at a time)

For the Sauce

  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lb grass-fed ground beef
  • 1/4 tsp sea salt, plus more to taste
  • 2 25-oz jars favorite marinara sauce
  • 1-2 tsp dried Italian herbs (optional)
  • 1-2 tsp sweetener of choice

Directions

Preheat oven to 350. Lightly grease a large baking dish.

Time for sauce! Heat a large pot over medium heat. Once hot, add oil, garlic, beef, and salt, and begin sauteing, stirring occasionally for about 8 minutes, or until meat is browned. 

To the pot, add marinara sauce and stir to combine. Cook on low for about 10 minutes. Remove from heat and set sauce aside.

Next, make your "cheese." Add all cheese ingredients except water to a food processor and mix into a loose paste. Add 2/3 cup water. Continue mixing. Continue adding 1 tbsp water at a time until a thick paste forms. 

Taste and adjust flavor as needed, adding more nutritional yeast for cheesy flavor, lemon juice for acidity, or salt and garlic for added savory flavor. Blend again to combine.

To begin assembling your lasagna, add a thin layer of marinara sauce to your baking dish. Spread to ensure even distribution. Add a layer of the uncooked lasagna sheets. Top with a thin layer (roughly 1/3 of the mixture) of your cashew cheese and spread into an even layer. Repeat the process 3 times to create 3 layers. Top with marinara and cheese sauce.

Cook on the middle rack of preheated oven for 40-45 minutes uncovered. Carefully remove from the oven and let cool 5-10 minutes before serving. Then slice, serve, and enjoy!
