There's no cozy, comforting meal quite like a classic chicken noodle soup. But if you've ever tried using gluten-free noodles in a soup, you might have experienced the dreaded mushy, dissolving noodle problem. With Taste Republic Gluten-Free Fusilli, this soup is chock-full of hearty, perfectly al dente noodles and delivers all the warm feelings of your favorite chicken noodle soup.
for -3+ servings:
- 1 package of Taste Republic Gluten-Free Fusilli
- 2 tbsp of olive oil
- 1 cup of sliced carrots
- 1 cup of sliced celery
- 1 cup of chopped onion
- 64 oz of chicken broth
- 2 dry bay leaves
- 1 tsp of thyme
- 1/2 tsp of oregano
- 1 tsp of pepper
- 2 minced garlic cloves
- 2 cups of shredded cooked chicken (homemade or rotisserie)
Add olive oil to a large stockpot and heat on medium.
Add carrots, celery, onion and sauté for about seven minutes.
Add garlic and sauté for another 1-2 minutes.
Add chicken broth, bay leaves, thyme, oregano, and pepper. Bring to a boil.
Add fusilli and let boil for 2-3 minutes until tender.
Reduce heat and shred up cooked chicken. Pour two cups into pot until warmed all the way through.
Serve with crackers and enjoy!
