Beet Cashew Gluten-Free Fusilli

Nothing "beets" making a delicious pasta dinner with your family on a Friday night other than the fact it's completely gluten-free. This colorful masterpiece is as tasty and nutrient-packed as it is pretty!


1 package Taste Republic Fusilli

1/2 ripe avocado

1/2 cup thawed blanched beets

1/3 cup cashews

1/4 cup Yumbutter Cashew Butter

1/2 tsp mushroom powder


In a food processor, combine avocado, beets, cashews, mushroom powder, and cashew butter. Process until smooth.

Boil and drain pasta according to package instructions. Put pasta back into saucepan and add sauce. Heat on low. Top with sliced avocado and cashews to serve!
