Tomato Basil Tortelloni Salad

Get ready to be invited to every cookout with this recipe in your back pocket. Since it's gluten-free, everyone at the table can enjoy - and it only gets tastier if you make it in advance!

  • 2 packages of Taste Republic Gluten-Free Four Cheese Tortelloni
  • 1 cup of cherry tomatoes
  • 1 cup of mozzarella balls
  • 3 tbsp of red onion, diced
  • 3 tbsp of olive oil
  • 3 tbsp red wine or balsamic vinegar
  • 2 tbsp of fresh parsley, minced
  • 2 tbsp of fresh basil, minced
  • 1 tbsp of oregano
  • 1 tsp of salt and pepper
  • Instructions

    1. Cook pasta according to package instructions and set aside.
    2. Mince the fresh herbs, cut tomatoes in half, and dice the red onion.
    3. Combine everything in a bowl and top with olive oil and vinegar.
    4. Chill for one hour and add mozzarella balls. Enjoy!
