Spinach Basil Pesto

Tis the season for alllll the fresh, zesty pesto. This one comes with a bonus - 3 cups of spinach in a batch so you can get some extra greens in!


1 package cooked Taste Republic Chickpea Linguini

Spinach Basil Pesto:

3 packed cups baby spinach

3 tbsp EVOO

1/4 cup raw cashews

2 tbsp water (more if you want need to thin it)

Juice from 1/2 lemon🍋

1 big handful fresh basil

Salt and pepper to taste


Mix all ingredients in a food processor, scraping down the sides periodically. Mix with pasta, add pan charred grape tomatoes and enjoy!
