One-Pot Gluten-Free Creamy Tomato Linguini

This one-pot gluten-free creamy tomato linguini is the ultimate weeknight comfort food. Made with Taste Republic Gluten-Free Linguini, fresh vegetables, and a rich tomato-cream sauce, it's a minimal-prep, maximum payoff dinner.

Ingredients

  • 1 package Taste Republic Gluten-Free Linguini

  • 1 ½ cups whole cherry tomatoes

  • 1 ½ cups fresh spinach

  • ½ red onion, finely chopped

  • ¼ cup tomato paste

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 teaspoon Italian herbs

  • 1 cup heavy cream

  • 1 ½ cups vegetable or chicken broth

  • ½ cup grated Parmesan cheese

Directions

  1. Layer the ingredients: In a large pan, add the uncooked gluten-free linguini, making sure the noodles are separated and not clumped together. Layer the cherry tomatoes, spinach, red onion, tomato paste, salt, pepper, and Italian herbs on top.

  2. Add the liquids: Pour in the heavy cream and broth. Do not stir.

  3. Cook: Cover the pan and cook over medium heat for about 10 minutes, or until the liquid comes to a boil. Stir occasionally to prevent the pasta from sticking.

  4. Thicken the sauce: Stir in the Parmesan cheese until fully combined. Reduce heat to low, cover, and let sit for 5 minutes to allow the sauce to thicken.

  5. Serve: Plate and serve warm, with extra Parmesan if desired.
