Lightened Up Gluten-Free Alfredo Sauce with Cauliflower Linguini

Ahh, Alfredo. Is there any comfort food like creamy, cheesy pasta? Most of us think of Alfredo as an indulgence, but this lightened-up version is gluten-free and full of wholesome ingredients so you confidently add it to your regular meal rotation!

Ingredients

9 oz of Taste Republic Cauliflower Linguini

2 Tbsp butter⁠

1 Tbsp organic cream cheese⁠

1/2 tsp minced garlic⁠

1/2 cup 1% milk⁠

1/2 cup organic chicken broth

3/4 cup organic shredded mozzarella

1/3 cup grated Parmesan⁠

1 Tbsp arrowroot powder⁠

black pepper⁠

salt, to taste⁠

Directions

Cook pasta according to directions on package and save cooking liquid. Melt the butter in a skillet over medium heat. Add the garlic and cook for a few seconds. Add the softened cream cheese along with the milk and chicken broth. Stir or whisk until smooth. Whisk in the arrowroot powder then add both cheeses and stir until the sauce is creamy. Add the black pepper and salt to taste then toss in the cooked Cauliflower Linguini straight from the cooking liquid. Coat in the sauce, and serve with organic gluten-free breaded chicken chunks and a garnish of crispy kale flakes.
