Creamy Pumpkin Gluten Free Pasta Ingredients
2 tsp olive oil
2 tsp minced garlic
½ cup of cream cheese
1 ½ cups of canned pumpkin
½ tsp salt
½ tsp ground black pepper
1 tsp pumpkin pie spice
½ cup of pasta water
1 package of Taste Republic Gluten-Free Fusilli
2 tsp Parmesan cheese
Creamy Pumpkin Gluten Free Pasta Directions
Cook Gluten-Free Fusilli according to package instructions. When straining, save the pasta water by placing a bowl underneath the colander. Set pasta aside.
In a medium sauce pan, heat olive oil over medium heat. Once lightly bubbling add garlic and stir.
When garlic has slightly browned, add cream cheese and stir slightly. Then add pumpkin, pepper, pumpkin pie spice and and stir together until ingredients start to melt and easily combine.
Add pasta water to loosen if desired. Add strained pasta to the sauce and combine well.
Plate and serve, topping with Parmesan cheese if desired.
