Creamy Lemon Pesto Tortelloni

Light, yet full of flavor, this bright pesto is perfect tossed with your favorite tortelloni. We used our new Tomato & Feta Tortelloni to add a kick of sweet heat!

It's a great dish that allows you to enjoy the freshness of summer basil. Perfect for those warm summer nights when dining outside is a must!


  • 1 package Taste Republic Tomato & Feta Tortelloni
  • 3 cups fresh Italian parsley
  • 1/2 cup fresh basil
  • 1 clove garlic, minced
  • 1/4 cup pine nuts
  • 1/3 cup lemon juice, freshly squeezed
  • 1 Tbsp lemon zest
  • 1 tsp salt & pepper, each
  • 1/4 cup ricotta cheese
  • 1/2 cup olive oil
  • 3 Tbsp Romano cheese 
  • 1/3 cup reserved pasta water


To make the pesto, combine parsley, basil, garlic, pine nuts, lemon juice, lemon zest, salt/pepper, and ricotta in a blender. Blend until smooth, drizzling in olive oil while the blender is running. Set aside.

Meanwhile, cook pasta in boiling water per package directions. Reserve pasta water and then strain.

In a large bowl, combine pesto, pasta water, pasta, and Romano cheese. Fold together until evenly coated. Plate and enjoy!
