Ingredients
1 package of Taste Republic Gluten-Free Cauliflower Penne
1 cucumber, chopped
1 orange bell pepper, chopped
1/2 a red onion, chopped
2/3 cup dill pickles, chopped
1 can chickpeas, strained & rinsed
1/2 cup shredded cheddar cheese
2 tbsp light mayonnaise
1/4 cup plain Greek yogurt
3 tbsp pickle juice
4 tsp ranch seasoning
1 tsp garlic powder
Salt and pepper, about 2 tsp each
Directions
Cook Gluten-Free Cauliflower Penne according to package instructions and set aside to cool.
While pasta cooks chop all your vegetables.
Assemble the pasta salad by adding all ingredients into a large mixing bowl. Toss together until well combined. Adjust seasonings according to taste preference.
Store in the fridge for up to 5 days!
