Ingredients for Dressing
1/3 cup olive brine
1/4 cup olive oil
1 cup pasta water
1/2 cup blue cheese crumbles
1 lemon, juiced
2-3 garlic cloves
1 tsp ground black pepper
Pasta Salad Ingredients
1 package of Taste Republic Gluten-Free Red Lentil Fusilli
1 cup of green olives
2 tsp thyme, or any fresh herb
Gluten-Free Dirty Martini Pasta Salad Directions
Cook Taste Republic Gluten-Free Red Lentil Fusilli according to package instructions and once strained, set aside to cool for 10 minutes. Reserve pasta water.
Combine salad dressing ingredients in a food processor or with a handheld mixer, leaving out the blue cheese. Add blue cheese when all is combined to ensure it remains chunky. Set Aside.
Add pasta to a bowl, top with homemade dressing, green olives and thyme. Stir until well combined. Plate and serve.
