30 Minute Gluten-Free Tortelloni Lazy "Lasagna"

All the lasagna flavor with just one pot and 30 minutes? Yep - it's possible with this gluten free Tortelloni Lasagna! 

Ingredients

  • 18 oz Taste Republic refrigerated Tortelloni
  • 1 lb ground beef
  • ½ medium onion, diced
  • 4 garlic cloves, minced
  • 2 tsp avocado oil
  • ½ tsp salt (for meat)
  • ¼ tsp black pepper (for meat)

For the Sauce

  • 1 (28 oz) can of marinara sauce
  • 1 cup water
  • ¼ tsp red pepper flakes (optional)

For the Ricotta Topping

  • 1 cup ricotta cheese
  • ½ cup shredded mozzarella
  •  ½ cup grated Parmesan
  • 1 tbsp chopped parsley
  • ½ tsp garlic salt (or to taste)
  • ¼ tsp black pepper

For the Final Dish

  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan
  • Fresh parsley, chopped

Instructions:

  1. Heat avocado oil in a large skillet. Sauté onion for 3 min, add garlic, and cook 1 min.
  2. Add ground beef, season with salt & pepper, and cook 5 min.
  3. Add marinara. Simmer 6–8 min.
  4. Pour in water, bring to a simmer, and add Tortelloni. Cover and cook 2-3 min, until tender.
  5. Sprinkle on mozzarella and Parmesan. Add dollops of ricotta mixture on top.
  6. Broil uncovered for 3–4 min, until bubbly and golden. Garnish with parsley and enjoy!
