Still drooling over this lemon chilli pasta that we whipped together, so we thought we’d share it here! It’s grain-free, gluten-free and definitely guilt-free. Just a healthy indulgence, ready to eat.
Ingredients
1 tbsp olive oil
4-5 garlic cloves, peeled and finely chopped
1 ½ cups grated zucchini
Zest of 1 lemon
1 tsp chili flakes
1 package of Taste Republic Gluten & Grain-Free Cauliflower Linguini
¼ cup of pasta water
Directions
In a saucepan over medium heat, warm olive oil. Add garlic cloves and stir occasionally for about 1 minute or until fragrant. Add in zucchini, lemon zest and chilli flakes. Stir well and then adjust to low heat and let stand with a lid on top.
Cook Gluten & Grain-Free Cauliflower Linguini according to package instructions. If cooking from frozen, loosen pasta in the water by stirring with a cooking spoon the moment the pasta has been placed in boiling water. When straining, save the pasta water by placing a bowl underneath the colander.
Loosen the sauce with pasta water and stir. Fold the cooked pasta into the sauce and stir well to combine.
