Lazy girl dinner, but make it delicious. This one needs just a handful of ingredients and about ten minutes, yet tastes like something from your favorite Italian spot. The cherry tomatoes burst into a fresh sauce, the ricotta makes it creamy and dreamy, and fresh basil ties it all together. Minimal effort, maximum payoff.
Ingredients
- 1 package Taste Republic Linguini
- 1 cup vine cherry tomatoes
- Olive oil
- 1/2 tbsp minced garlic
- Italian seasoning, to taste
- Salt and pepper, to taste
- 1/2–3/4 cup ricotta or 1 package Boursin cheese
- 1/4 cup fresh basil, chopped
- Optional: Pinch of red pepper flakes
Directions
Heat a drizzle of olive oil in a large pan over medium heat. Add the cherry tomatoes and garlic.
Meanwhile, bring a pot of salted water to a boil and cook the linguini according to package directions.
As the tomatoes soften and begin to burst, season with Italian seasoning, salt, pepper, and red pepper flakes if desired.
Stir in the ricotta or Boursin until smooth and creamy. Add the cooked linguini to the pan and toss until evenly coated.
Finish with fresh basil and serve immediately.
