Lemon Ricotta Pasta

Ingredients

1 package Taste Republic Four Cheese Tortelloni
1/2 cup ricotta cheese
1/2 cup grated Parmesan
1/2 cup reserved pasta water
Zest of lemon
1 ½ tbsp lemon juice
A handful of arugula

Directions

Bring a large pot of salted water to a boil. Cook tortelloni until al dente, then drain, saving 1/2 cup of pasta water.

In a pan over low heat, combine pasta, ricotta, Parmesan, lemon zest, and lemon juice. Stir to coat.

Add the pasta water, stirring until the sauce is silky and creamy.

Toss in the arugula and mix until just wilted.

Optional: Top with extra Parmesan or lemon zest before serving
